Credo - Jesenji meni

Prošle godine Gastro policija vas je upoznala sa konceptom rada hotelskog restorana Credo koji se nalazi u srcu Beograda, u blizini Trga Republike. Početak jeseni i dolazak novog šefa kuhinje doneo je mnogobrojne izmene u jelovnik ovog restorana. 

Za vas smo u ovom postu pripremili mnogobrojne fotografije jela iz novog menija (uglavnom u tapas verziji te nemojte da se uplašite kada vidite mini porcije). Što se tiče cena koje budu navedene pored naziva jela, one odgovaraju standardnoj veličini porciji. Pa da počnemo otpočetka!

HLADNA PREDJELA
  • Salata sa mariniranom pačetinom i indijskim orahom (1200 RSD)
Tapas porcija
  • Marinirani losos u soku od krastavca, sa renom i kozijim sirom (1100 RSD)

  • Krem od guščije džigerice sa lešnikom i narom (1200 RSD)

  • Kinoa salata sa kremom od jogurta, sa bobičastim voćem (750 RSD)

Jela iz ove grupe su blažeg, neutralnijeg ukusa i moj favorit je definitivno Krem od guščije džigerice sa lešnikom i narom. Mislim da je definitivno eksplozija nara u mojim ustima donela sud u korist ovog predjela, jer sam ja ipak fan nekih malo jačih ukusa.

TOPLA PREDJELA
  • Čorba od paradajza sa kukuruzom i grilovanom hobotnicom (650 RSD)

  • Pileći konsome sa tortelinama sa orahom i šargarepom (450 RSD)

  • Lignje na braon puteru u krem sosu od dagnji sa prazilukom (1300 RSD)

  • Krem supa od pečenog celera sa karamelizovanim orahom (350 RSD)

Što se tiče ove grupe jela, ovde je izbor za favorita mnooogo teži u odnosu na prvu grupu. Svako jelo nosi svoj pečat ukusa, fenomenalno je začinjeno i svako je servirano u originalnim posudama (a sećate se da je to moja slaba tačka). Ipak ako bih morala da odaberem jedno prelomila bih u korist Krem supe od pečenog celera sa karamelizovanim orahom, jer je definitvno nešto novo i potpuno drugačije od svih toplih predjela koja sam imala priliku da probam do sada.

JELA OD TESTA
  • Gnudi sa sremskim sirom i pečurkama (900 RSD)
Tapas porcija
  • Taljatele sa pilećim batakom, pestom od rukole i mariniranom paprikom (850 RSD)

  • Torteline sa celerom i sremskim sirom, orasima i kremom od aćeto balsamica (700 RSD)

Veliki sam obožavatelj jela od testa, i mislim da bih mogla da živim na ovim jelima (da, znam, koliko je to nezdravo, ali imam tu ludačku sreću da se od testa ne gojim, pa što da ne iskoristim to dok mi metobalizam radi ludačkom brzinom). Od ovih jela NAJJAČI UTISAK (velikim slovima!) ostavilo je jelo Gnudi sa sremskim sirom i pečurkama. Gnudi je specijalitet koji je toliko jednostavan (priprema se od sira koji se uvalja u testo i baci u tiganj), a toliko sjajnog ukusa, te definitivno ukoliko se nađete u ovom restoranu, naručite ovo jelo, i shvatićete o čemu vam pričam!

JELA OD MESA
  • Svinjska rebra kuvana u misu sa kremom od slatkog krompira i slanim kikirikijem (1200 RSD)

  • Ribeye za 2 osobe, sa holandez sosom i tartufima / sa šargarepom (6500 RSD)

Jela su punog i definisanog ukusa, spremljena sa dosta ljubavi i strpljenja. A kada smo već kod strpljenja onda će pobednik u ovoj grupi jela definitivno biti Ribeye za 2 osobe, sa holandez sosom i tartufima / sa šargarepom. Meso odležano 40 dana (!!!) i nakon toga pripremljeno sa aromatičnim biljem i povrh svega toga posluženo sa dve vrste sosa zaista zaslužuje ne samo prvo mesto u grupi - Jela od mesa, već je i pobednik celog novog menija restorana Credo!!

DESERTI
  • Čokolada sa kamilicom i bobičastim voćem (580 RSD)

Kao što sam i prošle godine napisala da nisam neki fan slatkiša, dolaskom u Credo postanem najveći sladokusac. Za nijansu prednost dajem Credo kolaču od sira sa malinama i ružom. Ovo je ona vrsta deserta koja vas zasladi ali i osveži istovremeno. Baš po mom ukusu!

I za kraj posta - sve pohvale za osoblje restorana koje je i dalje preljubazno, a naročite pohvale za novog šefa kuhinje! Uspeo je da donese nešto sasvim novo na gastro scenu Beograda i hvala mu na tome!!

Last year, Gastro police introduced you to the concept of work of the hotel restaurant Credo, located in the heart of Belgrade, near the Republic Square. Beginning of the fall and the arrival of their new chef, brought a number of changes to the menu of this restaurant.


In this post, we prepared many photos of the dishes from the new menu (mostly tasting menu portions, so don’t be afraid when you the sizes). The prices listed next to the name of the dish correspond to the standard size of the portion. So let's start!


COLD APPETIZERS

  • Salad with marinated duck breast and cashew nut (1200 RSD)

  • Marinated salmon, goat cheese, cucumber and horseradish cream (1100 RSD)

  • Foie gras creme with hazelnut and pomegranate (1200 RSD)

  • Quinoa salad with yoghurt and berries (750 RSD)

The flavors of the dishes from this group are mild, more neutral and my favorite is definitely Foie gras creme with hazelnut and pomegranate. I think the explosion of the pomegranate in my mouth decided in favor of this dish, because I’m a fan of a bit stronger tastes.

WARM APPETIZERS
  • Tomato soup with sweetcorn and grilled octopus (650 RSD)

  • Chicken consomme with tortellini, walnuts and carrots (450 RSD)

  • Squid in brown butter with mussel sauce and pickeled leeks (1300 RSD)

  • Creamy celery soup with caramelized walnuts (350 RSD)

As for this group of dishes, choosing the favorite was much harder than in the first group. Every dish carries its own taste signature, beautifully seasoned and each is served in original dishware (remember, this is my weakness). However, if I had to choose one, it would be the Creamy celery soup with caramelized walnuts, because it’s definitely something new and completely different from all the warm appetizers I have ever tried.

PASTA DISHES
  • Dumplings with mushrooms, cheese and Serbian truffles (900 RSD)

  • Pappardelle with rucola pesto, chicken drumstick and marinated peppers (850 RSD)

  • Tortelini with roasted celery, local Sremski cheese, walnut and balsamic cream (700 RSD)

I'm a big fan of pasta dishes, and I think I could live on these (yes, I know how unhealthy it is, but I have this crazy luck of not gaining weight while eating those kinds of dishes, so why not use it, whilst my metabolism is fast). Out of these dishes, the dish that left the BIGGEST IMPRESSION (in capital letters!) is Gnudi dumplings with mushrooms, cheese and Serbian truffles. Gnudi is a specialty that is so simple (prepared from cheese rolled in dough and thrown into a pan), so tasty, and if you find yourself in this restaurant, definitely order this dish, then you’ll understand what I'm talking about!

MEAT DISHES
  • Pork ribs in miso with creamy sweet potato and peanuts(1200 RSD)

These dishes have full, rich and defined taste, prepared with plenty of love and patience. And speaking of patience, the winner of this group of dishes is definitely the Ribeye for two, with Hollandaise sauce and truffles/ with carrot. Dry-aged for 40 days (!!!) and afterwards prepared with aromatic herbs and, above all, served with two kinds of sauce, it really deserves to be the winner not only in the group - Meat dishes, but  also the winner of the whole new menu of the Credo restaurant!!

DESSERTS
  • Chocolate cake with cammomile and berries (580 RSD)

Last year I wrote that I'm not a big fan of sweets, but after visiting Credo I become a big one. I slightly prefer the Credo cheesecake with rose and raspberries. This is the kind of dessert that sweetens and refreshes you at the same time. Just how I like it!
And for the end of this post - all the praise for the staff of the restaurant that is still cordial, and special praise for the new chef! He managed to bring something completely new to the gastronomic scene of Belgrade and I thank him for that!!
